Last Minute V-Day Treats!


Hello! A lot of you probably don't know this about me since I post primarily fashion and beauty but I love to bake. I even started a baking club at my school this year! Baking is something I love and I love to share with  others! That being said I figured I would share some of my favorite easy Valentines day treats for that special someone you've been eyeing.These are great last minute sweets for procrastinators like me so this is for you gals! (Disclaimer - none of these recipes are mine, and I am not a chef or anything, I just like sweet things) 

Vanilla Cupcakes with Strawberry Icing
I'm starting off with something fun and something (I would hope) most people would like. If you see Vanilla and your like bleh, then no worries! You can always make chocolate if you or your special someone is a fan of chocolate, you can replace the vanilla cupcakes with chocolate, but I'm more of a vanilla gal so I went with it instead of chocolate. These are super yummy and the strawberry icing is deadly it is so good.

Or you can just use a store-bought cupcake mix!

Strawberry Icing 

  • 1/2 cup of strawberries - pureed
  • 1 cup of butter
  • Pinch of salt
  • 3 1/2 cups of powdered/confectioners sugar
  • 1/2 Teaspoon of vanilla extract
  • Place strawberries in the bowl of a small food processor; process until pureed. In the bowl of an electric mixer fitted with the paddle attachment, beat together butter and salt on medium speed until light and fluffy. Reduce mixer speed and slowly add confectioners' sugar; beat until well combined. Add vanilla and  strawberry puree ; mix until just blended. Frosting consistency should be dense and creamy, like ice cream.

Red Velvet Cupcakes with Cream Cheese Icing
I love red velvet cupcakes and they are super fitting for Valentines day because they are - red, like everything that revolves around Valentine's day. These are super cute and easy to make and I love making them! Also they make soooo much it's unbelievable so you can share them with others or save them for yourself for awhile!

Donuts
If you are not a cupcake gal, and you are looking for a slightly healthier funner more unique kind of treat, then these donuts are for you. They are super sweet and light, and perfect if you love donuts but don't like that heavy feeling they leave you with. And they're super cute, so try them out!

  • 1/3 cup + 1 tbsp milk
  • 1 tsp white vinegar
  • 3 tbsp unsalted butter, melted
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup sugar 2 tbsp honey
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 3 tbsp whipping cream (plus a little extra, if needed)
  • 1 tsp vanilla extract
  • 1 cup confectioner’s sugar
  • pink/red food coloring
  • edible glitter (optional)

  1. Combine the milk and vinegar in a small bowl. Place in the fridge for 15 minutes to chill – this makes homemade buttermilk!
  2. Whisk together the flour, baking powder and salt in a small bowl and set aside. In a large bowl, combine the butter, sugar, honey, egg and vanilla extract. Add the buttermilk and mix until combined. Add the dry ingredients and mix until just combined – make sure not to overmix.
  3. Spoon the batter into a piping bag fitted with a round tip and pipe into a greased doughnut pan. Bake at 400F for 7 minutes. Cool for 1 minute in the pan, then flip the pan over to remove the doughnuts and cool completely on a wire rack.
  4. Make the glaze: Whisk together 1 tbsp half and half cream and the vanilla extract. Add the confectioner’s sugar and whisk until fully combined. If the glaze is too thick, add a dash more whipping cream.
  5. Dunk the doughnuts into the glaze and return to the wire rack. Sprinkle some edible glitter on top. Allow the glaze to dry for 20 minutes, and enjoy!
